Crisp Chicken W/ Mustard Vinaigrette

Ingredients

Salad:

• 250g chicken breast
• 1 cup shaved Brussels sprouts
• 2 cups baby spinach
• 2 cups mixed greens
• 1/2 avocado sliced
• Segments of one orange
• 1 teaspoon raw pumpkin seeds
• 1 teaspoon toasted almonds
• 1 teaspoon hemp seeds


• Dressing:

• 1/2 shallot, chopped
• 1 garlic clove, chopped
• 2 teaspoons balsamic vinegar
• 1 teaspoon extra virgin olive oil
• ½ cup fresh orange juice
• 1 teaspoon Dijon mustard
• 1 teaspoon raw honey
• Fresh ground pepper


Directions

1. In a blender, blend all dressing ingredients until very smooth; set aside.
2. Set your air fryer toast oven to 350 degrees and brush the basket of the air
fryer toast oven with oil.
3. Place the chicken breast on the basket and cook for10 minutes, 5 minutes
per side.
4. Take out of the air fryer toast oven and transfer to a plate. Let sit for 5
minutes then cut into bite-sized chunks.
5. Combine all salad ingredients in a large bowl; drizzle with dressing and
toss to coat well before serving.
