Sweet Potatoes With Tofu

Ingredients:

• Eight sweet potatoes, scrubbed
• Two tablespoons olive oil
• One large onion, chopped
• Two green chilies, deseeded and chopped
• 8 ounces (227 g) tofu, crumbled
• Two tablespoons Cajun seasoning
• 1 cup chopped tomatoes
• One can of kidney beans, drained and rinsed
• Salt and ground black pepper, to taste


Directions:

1. Press Start/Cancel. Preheat the air fryer oven to 400ºF (204ºC).
2. With a knife, pierce the skin of the sweet potatoes and transfer to the
fry basket. Insert the fry basket at mid position. Select Air Fry,
Convection, and set time to 30 minutes, or until soft.
3. Remove from the air fryer oven, halve each potato, and set to one
side.
4. Over medium heat, fry the onions and chilies in the olive oil in a
skillet for 2 minutes until fragrant.
5. Add the tofu and Cajun seasoning and air fry for a further 3 minutes
before incorporating the kidney beans and tomatoes. Sprinkle some
salt and pepper as desire.
6. Top each sweet potato halves with a spoonful of the tofu mixture and
serve.
